Obtained from the nectar of coconut palms in Java,
coconut blossom sugar is the new star among low-glycemic sweeteners
and with its fine and light caramel flavor, it is an excellent
alternative to conventional sugar. Our coconut blossom sugar
comes from certified organic palm trees and is handmade by small farmers in Java.

Only one liter is obtained per day and palm tree. Then the juice is sieved
and boiled down over an open fire, stirring constantly, to make syrup,
until it crystallizes and acquires the typical sugar granulation.
The still hot mass is ground in a bowl to cool down and produce the granulated sugar.

Gewonnen aus dem Nektar der Kokospalmen auf Java, ist der Kokosblüten-Zucker
der neue Star unter den niedrig-glykämischen Süßstoffen und mit seinem feinen
und leichten Karamellaroma eine ausgezeichnete Alternative zu herkömmlichem Zucker.
Unser Kokosblüten-Zucker stammt von Palmen aus kontrolliert biologischem Anbau und
wird von Kleinbauern auf Java in Handarbeit hergestellt. Dazu werden die Kokosblüten
angeschnitten und ihr Saft wird zweimal pro Tag aufgefangen. Lediglich ein Liter
wird so pro Tag und Palme gewonnen. Dann wird der Saft gesiebt und über offenem Feuer
unter ständigem Rühren zu Sirup eingekocht, bis er kristallisiert und
die typische Zuckerkörnung bekommt. Die noch heiße Masse wird zum Auskühlen
in einer Schale zerrieben, um den Kristallzucker herzustellen.
