Ein bisschen Nostalgie kommt schon auf, wenn man die kleine Manufaktur in Mattwil betritt. In der Ecke steht ein alter Kupfertopf auf dem Gasherd und darin schmelzen die Zutaten für feinste Nidletäfeli. Jedes Mürbel ist verschieden und einzigartig, da es nicht in eine Form gezwängt, sondern von Hand gebrochen wird. Je nach Wetter, Temperatur, Luftfeuchtigkeit und wahrscheinlich auch Laune des Carameliers unterscheiden sie sich leicht von einander. Jedes Mürbel schmilzt aber ganz leicht auf der Zunge und ist ein unwiderstehlicher Genuss.
