Freekeh has been a staple in Palestine, Syria and Jordan for thousands of years,

The legend of the legendary grain tells of a small village in the eastern Mediterranean.
One day it was attacked and the wheat crop was burnt by fire.
But the village community soon discovered that the grains were still edible,
all they had to do was rub the charred chaff off the wheat - and Freekeh was discovered.

It is the roasting process that gives Freekeh its special nutty and typically smoky flavour.
Because the Freekeh is harvested so early, it contains more nutrients than in a later maturing process.

Some even call it a superfood! The health booster is unique in its fibre content.
Freekeh contains twice as much fibre as quinoa and four times as much as brown rice.

Bereits seit Jahrtausenden steht Freekeh in Palästina,
Syrien und Jordanien fest auf dem Speiseplan.
Die Legende des sagenumwobenen Kornes berichtet von einem kleinen Dorf im östlichen Mittelmeerraum.
Eines Tages wurde es angegriffen und die Weizenernte wurde durch ein Feuer verbrannt.
Aber die Dorfgemeinde fand schnell heraus, dass die Körner trotzdem genießbar waren,
man musste nur die verkohlte Spreu von Weizen abreiben – damit war Freekeh entdeckt.
Denn, die hohe Feuchtigkeit in den jungen, grünen Weizenkörnern bewahrte den köstlichen Kern.
Erst die Röstung verleiht dem Freekeh seinen besonderen nussigen und typisch rauchigen Geschmack.
Da das Freekeh so früh geerntet wird, enthält es mehr Nährstoffe als in einem späteren Reifeprozess.
Es ist ein nährstoffreiches Lebensmittel, gut für die Gesundheit und das allgemeine Wohlbefinden.
Manche bezeichnen es sogar also Superfood! Der Gesundheitsbooster ist in seinem Gehalt an Ballaststoffen einzigartig.
Freekeh enthält doppelt so viele Ballaststoffe wie Quinoa und viermal so viel wie brauner Reis.
