Curtido «Uivo» 2021 - Folias de Baco Douro, Portugal

From +35 year old vines,
planted on 2 hectares of slate and granite soils.
The grapes are harvested by hand in September, strictly sorted,
partially destemmed but not pressed, and macerated for four months.
Spontaneous fermentation takes place in cement tanks (5000 l) with yeasts
from the surrounding area and lasts about three weeks at a controlled temperature.
After pressing, the wine remains on the lees for about

The wine is aged in cement tanks for six months.

Von +35 Jahre alten Rebstöcken,
die auf 2 Hektar Schiefer- und Granitböden gepflanzt sind.
Die Trauben werden im September von Hand geerntet, streng sortiert,
teilweise entrappt, aber nicht gepresst und vier Monate lang mazeriert.
Die spontane Gärung findet in Zementtanks (5000 l) mit Hefen
aus der Umgebung statt und dauert etwa drei Wochen bei kontrollierter Temperatur.
Nach dem Abpressen verbleibt der Wein
etwa zwei Monate auf der Hefe, ohne dass er aufgerührt wird.
Der Wein wird sechs Monate lang in Zementtanks gelagert
und weder geschönt noch gefiltert. Frisch und knackig!
